Shahi Phirni is a very popular dessert prepared by rice, milk, sugar, cardamoms and dry fruits. Phirni is a typical Indian sweet dessert made during festivals like Diwali, Karwa Chauth and Ramzan. Shahi Phirni recipe is very simple to make. And it’s a very delicious tasty dessert on any occasions or parties. You could serve it in terracotta pots because I love the smell and it gives this dessert nice Indian touch. Refrigerate this dessert after serving and you are set for any occasion.

Ingredients:

  • Gobindo bhog rice: 1/4 cup
  • Full Fat milk: 750 gm.
  • Sugar: 1/2 cup
  • Ghee: 1 teaspoon
  • Cardamoms: 4 pieces
  • Saffron: 1 pinch
  • Few cashew nuts, almonds and raisins


Preparation:

  • Wash the rice and soak in enough water for 30 mints.

  • Drain the water and grind in a blender to make a coarse paste.

  • Take a heavy bottom pan and add ghee.
  • Add milk, sugar and ground rice mix everything and continue stirring on low heat.

  • Add cardamoms seeds and saffron and cook on low flame till the milk is reduced to half and the phirni has thickened.

  • Add chopped dry fruits and cook another  5-10 mints.

  • Keep in mind that phirni will be thickened some more once cooled.
  • Transfer the phirni in terracotta pots and chill In the refrigerator.
