Bengali Bhapa Sandesh/Steamed Homemade Cottage Cheese Fudge




Today I prepare a very popular dessert in Bengal. It is one of the most loved and traditional sweet dishes in Bengal. It’s very simple and easy to make, need only a few ingredients to make this Bhapa Sandesh.
Bhapa Sandesh is so popular that it doesn’t need any introduction. Sandesh is a specific type of sweet created with chenna and sugar. In this recipe, I use home-made cottage cheese or chenna. Bhapa is Bengali word for steamed and this is normally cooked in a pressure cooker but I prepare this Sandesh in kadai. Basically, these sweets serve chilled. You try this recipe in summer. You make this recipe in any occasions or parties.

Yield: 2-3

Ingredients:

4 cup milk for making cottage cheese

4 tablespoon milk for making sandesh

2 tablespoon condense milk

4 tablespoon powder sugar

2 tablespoon dry fruit powder (few cashew nuts and few almonds)

Few pistachios

1 pinch saffron

1 teaspoon cardamoms powder

Preparation:

Take milk in heavy bottom pot and boil on medium-high heat.

Keep stirring when it starts to boil add the lemon juice and immediately switch off the flame.

Set a strainer over a mixing bowl and line it with muslin cloths. Carefully pour the milk curds into the strainer,  pour the cold water into it and wash it well. Squeeze the excess water.


Take a bowl, add 4 tablespoon milk and add 1 pinch of saffron and keep aside.

Once you have the soft chenna prepared for making Bengali sweets take the chenna in a mixer and blend 2 mints.

Then add powder sugar, condensed milk, dry fruit powder, cardamoms powder, saffron soaked milk and blend to a soft and smooth paste.


In a stainless steel container greased with ghee and add the mixer.  Add few pistachios, saffron and chopped almond and cover the container with foil paper.

Take a kadai place a stand add 1.5 cup water and cover it.


Once the water was started boiling place the container and keep the gas flame on low and cook 40-45 min.

After 45 mints bhapa sandesh is ready to let it cool in the refrigerator for 2 hours and cut the pieces and served it chilled.

  1. It usually comes with a built-in stand so that water can be dripped out from the bottom of the bowl as well. stainless steel colander
